PYE OF THE MONTH: PORK-LEEK-MUSTARD
A very lovely balanced pye, inspired by one of James' favor meals. Pork Chop with Leeks and Mustard. We slow cooked pork shoulders with minimal spices for 8 hours. Then we sauteed leeks in butter with a little cream and two french mustard's (coarse and smooth). We combined the leeks and shredded pork into our POM. It has a simple but amazing flavor.
