Rogue Pye: "My Mom's Mole" Chicken Pye
We start with Petaluma Rocky Chicken (Organic, No GMO's). The whole chickens are cooked with onions, celery, carrots, fresh sage, thyme and wine. The chicken is shredded and the stock is set aside, for the mole sauce. Additional Rocky Chicken Breast is Sous-Vide to retain moisture.
The Mole sauce is made with My Mom's Mole and our chicken stock. The chickens are combined with the mole sauce, roasted butternut and topped with Mole Queso, before being sealed and baked.
My Mom's Mole uses a wonderful arrangement of 25 spices and the Mole Queso has three different cheese (including Kerry Gold Cheddar).
